Tips

  • Make both the slaw and the mayo the day before. Neither suffers and the assembly then takes two minutes.
  • Do not let the slaw dressing pool in the bun. Drain properly and this sandwich holds together.
  • Keep the pickles even with the slaw in. They are sharp where the slaw is sweet, and the sandwich needs both notes.

Variations

  • Leave the cayenne out of the mayo for the mild version with slaw.
  • Add finely sliced spring onion to the slaw for a sharper finish.
  • Serve the same three components over rice instead of in a bun.
