KFC Mac & Cheese costs $2.99 and carries 140-540 cal. Elbow macaroni in a cheese sauce that is smooth rather than stringy and mild rather than sharp, which is deliberate. It is built to sit beside heavily seasoned fried chicken without competing with it, and a sharper cheddar version would fight the eleven herbs and spices instead of backing them up.

For a side it is unusually substantial. The individual portion is a real serving rather than a token, and it is the one side on the Sides menu that could pass as a small meal on its own. That is also the argument for the Mac & Cheese Bowl, which is this same mac with fried chicken on top for roughly double the price. It is vegetarian, which is worth knowing on a menu where the gravy is not.

  • Cheese goes in off the heat. Every grainy cheese sauce anyone has ever eaten was boiled.
  • Cream cheese is doing structural work here, not flavour. It keeps the sauce emulsified as it cools.
  • Keep a cup of pasta water. If the mac tightens too far before serving, that loosens it without diluting the flavour.
