Tips

  • White pepper carries the Original Recipe flavour more than any other single spice in the blend. Black pepper is not a substitute; it tastes of something else entirely.
  • Rub 3 tbsp of the brine through the dry flour before you coat anything. The lumps it makes are what give the crust its craggy surface.
  • Use a thermometer in the oil and one in the chicken. Colour tells you nothing useful about how done bone-in chicken is.

Variations

  • Coat once rather than twice for the thinner Original Recipe style crust.
  • Add 1 tsp of MSG to the flour, which is in KFC's own ingredient statement and does more for the savoury note than salt alone.
  • Finish in a 350F oven for 5 minutes if your oil ran cool and the crust needs firming.

For frying, generally yes. Dark meat carries more fat and more connective tissue, so it stays moist through the temperatures a crust needs. Breast dries out at the same temperature that makes a good coating.

Per gram of protein, the A La Carte Breast at $3.89 for 39g. Per dollar spent on something enjoyable to eat, the drum. They answer different questions.

Better than any other piece. Ten minutes at 375F in an oven brings the crust most of the way back. A microwave will not, and never has.
