Tips

  • Make the sauce a day ahead if you can. The vinegar and smoke need time to settle behind the honey, and fresh sauce tastes flatter and sweeter.
  • Simmer it until it coats a spoon. Thin sauce runs off the fillet and soaks the bun.
  • Keep the pickles. Every test of this sandwich without them ends the same way.

Variations

  • Add 1 tsp of chipotle in adobo for smoke with a little heat behind it.
  • Swap half the honey for maple syrup for a darker, less floral sweetness.
