The KFC Nashville Hot Chicken Sandwich costs $4.99 and carries 540 cal, which makes it both cheaper and lighter than the Classic Chicken Sandwich. It is an Extra Crispy filet coated in Nashville Hot sauce, then pickles and the Colonel's mayo on a brioche bun. The sauce is the point. Real Nashville hot chicken is finished with a paste of cayenne and hot frying oil, and KFC's version follows the idea: the sauce goes on after the fry, so it soaks into the crust rather than sitting on top of it.

This is the hottest sandwich on the Sandwiches & Wraps menu and the heat is direct rather than creeping. It lands on the first bite and holds level, which is the opposite of how the Spicy Chicken Sandwich behaves. The mayo and the pickles are doing real work as a counterweight, so ordering it without them is a mistake people make once. The whole trick to Nashville hot chicken is that the sauce is made with the frying oil. Hot fat carries capsaicin in a way water never will, which is why a paste made this way tastes deeper than a bottled sauce brushed on. It costs nothing extra because you are frying anyway.

Tips

  • Start with 2 tbsp of cayenne rather than 3 if you have not made this before. You can always brush on a second coat, and you cannot take one off.
  • The oil has to be properly hot when it hits the spices. Cool oil gives you a gritty paste instead of a glossy one.
  • Brush, do not dip. A dipped fillet goes soft in seconds and the crust was the whole point.

Variations

  • Add 1 tsp of chilli powder for depth without more heat.
  • Serve it on white bread with pickles and no mayo, which is how Nashville does it properly.
  • Use the same paste on wings or tenders. The chicken changes, the method does not.

Serve it with

  • Cole slaw, the traditional partner and the useful one.
  • White bread rather than brioche if you want the original build.
  • Milk. At $4.99 in a restaurant the drink is extra anyway.
