  • Peanut butter colour on the roux, not pale. Everything else follows from that.
  • Soy sauce here is colour rather than flavour. A teaspoon does the work of bottled gravy browning.
  • It thickens as it cools. Take it off looser than you want it on the plate.

Variations

  • Use the fond and drippings from roast chicken instead of stock for a much deeper gravy.
  • Vegetable stock and a teaspoon of miso makes a genuinely vegetarian version, which the restaurant one is not.
